Game Hens marinated in wine & fresh herbs,
roasted and grilled, with a Petite Sirah Syrah & molasses glaze

SERVES 10


Marinade Combine all ingredients in a large bowl or jar

2 Cups Narrow Gate Petite Sirah Syrah or other red wine
½ cup un-sulfured molasses
¼ cup balsamic vinegar
½ cup olive oil
¼ cup soy sauce
3 tablespoons each fresh thyme, fresh chopped rosemary, and fresh parsley

Game Hens:

5 Cornish Game Hens halved, divide halves between 2 large zip lock bags,
distribute marinade evenly between the two bags and refrigerate 6 – 24 hours.

Cooking the Hens and making the glaze:

Remove Hens from marinade and place marinade in a sauce pan set on high heat.
Bring to boil and reduce marinade in half until it gets thick and coats a spoon.

Heat BBQ or oven to 400 degrees. Sprinkle hens with sea salt and pepper and place breast side down
in large baking dish if oven roasting or directly on hot grill if grilling. Roast or grill for 10 minutes then
Glaze with marinade reduction. If glaze on skin begins to burn reduce heat. Glaze every 10 minutes
until hens are cooked through. Total cooking time may vary between 30 and 40 minutes.

Make Ahead:

Hens can be par roasted for 25 minutes in the oven, cooled and refrigerated, then finished on the
grill and glazed the next day.

Serving suggestions:

Serve hen halves atop wild rice pilaf, couscous or with roasted red potatoes or roasted root vegetables.

Wine suggestions:

Although the marinade contains molasses it is not sweet so the hens pair excellently with Rhone
varietal wines (Grenache, Syrah, Mourvedre) & blends (Petite Cuvee), Petite Sirah Syrah, Zinfandel and
Cabernet Sauvignon.
